I agree with this in general, but the question is _how_ often.
For argument's sake, let's say in Chess or Go, the better player wins all the games.
Unless I am willing to invest a lot of time to become "good", I will never even try to play a game with a good player.
On the other hand, I would not hesitate to play e.g. Magic against the best players in the world, as I know that there's a small chance I can win through having a better draw.
The question is how serious you want the game to be - you want it to be more serious, I want to play it with players new to the game and have them have a chance to win against me.
